    Pastaflora de Cáñamo: reversión nutritiva de un clásico

    Con variantes en su relleno y con un origen dispar, la “Pastaflora” forma parte de la historia gastronómica Argentina hace décadas. 

    No necesita de tanta presentación porque es un clásico de la pastelería rioplatense. Sin dudas, recoge más adeptos que detractores. Aquí un poco de su procedencia y la reversión cañamera.

    Es muy difícil que no esté en la estantería de cualquier confitería, panadería e incluso kiosco argentino. Vienen en distintas presentaciones y con rellenos deliciosos aunque la más aclamada y estándar es la de membrillo.

    El origen de la tarta pastafrola es una fusión y confluencia de la pastelería tanto italiana como austríaca. Por un lado, se encuentra una descendencia de la Crostata Italiana, ya que la ´pasta frolla´ es la masa que la compone.

    Por otro lado, existe la Linzer Torte, receta proveniente de Austria, que se asemeja a la estética y decoración en forma de cuadrículas o enrejado típico.

    La afluencia de las diferentes corrientes y comunidades inmigratorias que llegaron al territorio durante la primera mitad del S.XX, hicieron propicio para convertir este tipo de postre representativo casi parte de nuestro ADN.

    Lo que es seguro es que la pastafrola se compone de una base de masa quebrada, un relleno hecho con dulce y recubierto por tiritas de masa. Famosa por ser una de las tartas dulces más populares de nuestro país, icónica para acompañar el mate, el té o el café, presente en toda casa y hora, rellena con la original de membrillo, dulce de batata e incluso con dulce de leche. Son de esas recetas que en muchos hogares se difunden de la mano de la tradición familiar. Cuando en la mesa se sirve una pastaflora es mucho más que sólo un comestible rico, sino que además representa fraternidad y tradición.

    Sin embargo, a la fórmula culinaria habitual de la pastafrola se le puede una vuelta más y darle el toque con cáñamo. Entonces, aquí la receta, que cuenta de ingredientes más su paso a paso, para lograr su versión cañamera.

    Ingredientes:

    • 50gr Harina Cáñamo
    • 350gr Harina Leudante
    • 150gr Azúcar
    • 150gr Manteca
    • 1 Huevo
    • 1 Yema
    • 1 Cucharada Esencia Vainilla
    • 1 Cucharadita Sal
    • Relleno: 500gr Dulce de Membrillo + Agua Cantidad Necesaria

    Procedimiento:

    Preparar un bol con la manteca cortada en cubitos, en estado blando. Agregar luego el azúcar, comenzar a batir hasta conseguir una crema clara y lisa. Sumar el huevo y la yema más la esencia de vainilla (y opcional, ralladura de limón). Batir todos  estos ingredientes hasta que se integren correctamente.

    Una vez unida la mezcla, se le incorpora la harina leudante y la de cáñamo. En este punto, la masa adquiere una consistencia para amasar a mano. Cuando está bien unida, se deja reposar en heladera unos 30min.

    Mientras con el relleno, cortamos el membrillo en cubitos y verter en un recipiente con una cucharada de agua aprox. Derretir en microondas o en hornalla, aplastando con un tenedor o pisapapas. Cuidado que calienta mucho!

    Sacamos la masa de la heladera para armar la base en un molde. Para estirar se recomienda utilizar un film y el puño.  Luego acomodar los bordes y se rellena con el membrillo. La decoración es con las tiritas por arriba.

    La mejor opción es estirarlas entre dos films, colocarlas sobre el relleno y  despegar el film. Llevar al horno a 200º por unos 40min. Ojo puede estar antes! Sacar, dejar enfriar y a disfrutar!
