    Manjar atávico: la chipa en modo cañamera

    La chipa es un alimento tradicional y cultural del Paraguay, culturalmente conocida como ícono de la gastronomía de ese país y, también, entre los otros países de Suramérica, muy popular en el norte de Argentina, en algunas zonas brasileñas fronterizas del Paraguay e incluso en el este de Bolivia.

    Este tipo de pan cuya base tradicional es el almidón de mandioca y queso, se presenta en variadas formas, puede encontrarse como un bollo redondeado, alargado y hasta con forma de rosca, es consumido en diversos horarios del día (desayuno, merienda, como colación o también en almuerzo) ya sea solo o acompañado, junto con mate cocido o algún bebestible. La preparación y el comercio de la chipa es ampliamente difundida, lo que hace fácil y común encontrarla en cualquier panadería, mercado o como comida callejera. 

    En Paraguay, ha sido declarada como alimento tradicional según Ley N° 5267/2014, estableciendo el segundo viernes de agosto como “Día Nacional de la Chipa”. Así también, está valorada como Patrimonio Gastronómico Culinario por la Organización de las Naciones Unidas para la Educación, la Ciencia y la Cultura (UNESCO).

    La chipa es un preparado ancestral y se dice que su origen es el mbujape, un pan que elaboraban los indígenas guaraníes rallando mandioca cruda que se cocinaba envuelto en hojas de choclo que al calentarse, el almidón de la mandioca se vuelve pegajoso y a esa consistencia se la denominaba chipa, que en idioma quechua significa apelmazado. 

    Pero con el intercambio cultural producido entre europeos y originarios, a partir de las expediciones realizadas al Río de de la Plata en el siglo XVI, y las misiones franciscanas como jesuíticas que se instalaron en el corazón de la cuenca del Plata, es cuando se empezó a incorporar productos de origen animal como la leche, el queso y los huevos, terminando de dar forma a este exponente del mestizaje cultural hispano guaraní. 

    Además, la evolución de la chipa pasaba por su manera de cocción, realizándose en cuencos de barro de distintas formas y medidas, siendo la más tradicional la realizada en tatakua (horno a leña), que se mantiene hasta hoy día.

    En algunas zonas se le nombra “chipá o el chipá” en masculino y con acento en la «a», e incluso en el este de Bolivia donde su nombre puede ser cuñapé (pecho de mujer), o en Brasil se conoce como pão de queijo, y en Ecuador y Colombia, pan de yuca y pan de bono. Sin embargo, se puede seguir innovando y mostrar variante a este panecillo, a pesar de su gran desarrollo territorial y evolución a través del tiempo, hay espacio para darle lugar a su versión cañamera.

    Chipa Cañamera (gluten free)

    Ingredientes:

    • Fécula de Mandioca 200gr
    • Harina de Cáñamo 100gr
    • Manteca 100gr
    • Queso semiduro 260gr
    • Polvo de Hornear 10gr
    • Huevos 2uds
    • Agua 60cc
    • Sal a gusto

    Procedimiento

    En un recipiente mezclar la fécula de mandioca, el polvo de hornear y la sal (cuidado con la cantidad, que no quede salado). Unir bien los elementos secos, una vez incorporados, agregar el queso (pueden ser dos o más variedades pero semiduros no cremosos). Una vez integrados los ingredientes secos con el queso, formar una corona, proceder a sumar la manteca (en estado blando), los huevos y el agua. Luego amasar, hasta obtener una masa manejable y homogénea.

    Después, darle la forma de anillos o bolitas (formas más tradicionales). Tratar de que sean todas iguales así se hornean parejamente. Acomodarlas en una fuente, separadas porque crecerán en volumen y evitar que se peguen entre sí. Dejar reposar en heladera 10min. Cocinar a horno 200º por 10/15min. A degustar!
